Coconut Fudge

Here is a great recipe I recently discovered in my newest cookbook, “Make it Paleo” by Bill Stayley and Hayley Mason. It replaces traditional fudge, which is made almost entirely from processed white sugar. Give it a try and I’m sure you will enjoy it as much as my family did!

Coconut Fudge

1 cup coconut butter (oil)
¼ cup cocoa powder
2 tbsp pure maple syrup
1 tsp pure vanilla extract
½ tsp salt (or less)
½ cup shredded coconut

Melt coconut butter in the microwave for 30 seconds. Mix all ingredients together until smoothly blended. Place in a medium-sized Tupperware container lined with wax paper. Pat mixture to a flat, consistent layer. Refrigerate until firm, then cut into squares and serve.

*My tip: Store the fudge in the fridge or even freezer (if you have any left!) It melts faster than traditional fudge due to the coconut oil.
